Toasted Pine Nut Couscous with Garlic Shrimp



Ingredients:
1 lb. fresh or frozen large shrimp( I used the 'Easy to peel' kind from my fishmonger)
1 Tbsp. olive oil
4 cloves garlic, minced
1 tsp. dried tarragon, crushed
1/2 tsp. dried thyme, crushed
1/4 tsp. Old Bay seasoning ( or celery salt )
1 5.6 oz. package toasted pine nut couscous mix
1 1/4 cups chicken broth
2/3 cup sliced green onion
1/3 cup lemon juice
1/4 cup melted butter
1 6-oz. package baby spinach
Shredded parmesan cheese
Instructions:

Peel, devein and rinse shrimp, and then pat dry. Place shrimp in a large self-sealing plastic bag. Add oil, garlic, tarragon, thyme and Old Bay seasoning and seal bag. Gently turn and 'massage' the bag to coat the shrimp with the marinade. Refrigerate for at least one hour.
Prepare the couscous according to the package directions, substituting the chicken broth for the water. Stir the onions into the couscous. Set aside.
Combine the lemon juice and butter in a bowl, and set aside.
Saute' the shrimp in a large skillet with the marinade over medium heat for 3 to 5 minutes or until shrimp turns opaque. ( Do not overcook or the shrimp will be tough.) Pour half of the butter over the shrimp.
To serve, divide the spinach among individual bowls. Spoon the couscous onto the spinach. Arrange the shrimp on the couscous and pour the remaining lemon butter over everything. Sprinkle with shredded parmesan. Serves 4.

I've been so busy trying to keep up with my mom in the nursing home, the shop, my websites and just life in general. It's been keeping me really busy. Just stopping by to say hi. The weekend is almost here. I can't wait. We are going to bring my mom home tomorrow night for a few hours for her birthday. I'm really looking forward to it. She is improving a little everyday. Hopefully she will be able to home with my dad soon.


I also have a group of ladies that will be coming into my shop Saturday night to do a type of reading on my shop. I'm looking forward to that, but kind of nervous also. Hopefully all will go well. I can't wait. I have never done anything like this before. I met them last week and they gave me a fast reading. I'm not sure what I think of it yet. Hopefully I will get it posted soon. It was kind of spooky to me.  


Also, if you have any time, I just posted some EVP's in a blog on IAH. I would love to know what you think of them. You will have to listen really careful and have your volume all the way up. They are a little faint, but I can understand what they say so easy, which is very cool to me. Let me know what you think. Here is the web address for my IAH blog. Just stopping by to say MERRY CHRISTMAS!! I don't know if I'll have time to stop in again before Christmas. Things have been really busy around here with my mom in the hospital yet. I've never known a person that has been in the hospital so long and no coming home in site for her yet. She is getting some better, but it's been a very slow road.




The shop has been so busy and also I've been really busy with the sales of my book. It's selling great. I'm so happy about that.




Last weekend Santa came into the shop during Victorian Holiday's to pay a visit to Otis and Baxter. I don't think Otis liked him to well. He growled when he first saw him. Baxter loved him. They finely settled down enough to get a picture with Santa.



Just how cute is this. I haven't been able to dress the two of them up to much this year, because Baxter keeps eating all the bells. They aren't jingling as much as they used to. Baxter is a little stinker some days. He's so much fun though.



Between my mom, the shop and the boys, we are keeping so busy. Now we have snow storm after snow storm coming right at us everyday this week. Just what we need. I do have my tree up with the lights on it, but no ornament's as of yet, and I haven't even started Christmas shopping as of yet. I guess I'm going to be busy this week. It's just been really hard to get into the Christmas spirit with my mom not home. I'm working on it though. Hopefully the New Year will change things for the better. It's been a really ruff 3 months.
